Cook the onion in the olive oil for about five minutes, add the garlic and cook for another 15 to 30 seconds. Add the beets and pasta, and cook until the pasta is lightly toasted.
Add half a cup of the broth and stir for two to three minutes. Continue to add the broth in half cups, stirring constantly until the beets have softened and the pasta is al dente.
Remove the pan from the heat, cover, and let rest for five minutes.

Chilli and tomato prawn pasta
Cook the pasta for nine minutes, drain and set aside. Heat the olive oil in and sauté the chopped onions, garlic and chilli. Add the tomatoes and water simmer for 15-20 minutes.
Next, cook the prawns, and add to the chilli tomato sauce. Stir in the cream and season well with salt, pepper, paprika and treacle sugar.
One pot chilli Mac and Cheese

Chop up the onions and red pepper into chunks and finely chop the red chilies.
Heat the olive oil in a large skillet. Cook the onion, then add in the garlic and mince, then fry until the mince is cooked.
Add in the peppers, tomato puree, chili flakes, paprika, ginger, cumin, chipotle paste and one of the chopped red chilies. Now add the macaroni, stock and canned tomatoes, simmer for five minutes before adding the kidney beans and cook for eight to 10 minutes more.
Stir through half the cheese, then add sprinkle the rest of the cheese on top and place the lid back on until the cheese has melted.
Sprinkle with the remaining chopped chilies and the chopped cilantro and serve.

Coconut and raspberry pasta

Set the oven to gas mark 4 or 180°C.
Cook the macaroni in boiling water for about 10-12 mins or as directed on the packet, until it’s just tender. Drain well and tip it into a gratin dish. Scatter the lime leaves evenly over the dish, partly covering them with macaroni.
Lightly beat together the coconut milk, milk, eggs, and sugar, then pour this mixture over the macaroni.
Place dish in the center of oven and bake for 30-40 mins, or until just set in the center.
Remove from the oven and decorate with the raspberries. Dust with icing sugar and serve straight away.
